My Favorite Cranberry Granola.

I have tried creating granola before and it has always been good, but I decided to venture out after the hubs mentioned liking some granola that I had bought. I gave a speech recently where I showed different “healthy” foods and showed everyone the back nutritional panel and how to tell which item was better and so on. The result? I had a pantry full of random “health” food that needed to be eaten regardless if it was healthy or not. Hehe. That’s where the hubs started eating granola for breakfast. My issue - it wasn’t the best for him so I decided to try my own again. We both REALLY liked it and now I am apparently stuck making it for the foreseeable future.

I used a Coconut sugar versus regular because I needed some extra goodness… Coconut sugar has the same calories as regular sugar but has added calcium, iron and antioxidants. It is also minimally processed. (Hence the brown color.) Make sure you buy a product that is not mixed with regular sugar as well. The only ingredient should be coconut sugar.

I also added pumpkin seeds and chia seeds because I have a TON of those as well. And let’s be honest, we eat cranberries like they are going extinct so why not add those too?

I do make small batches instead of a great big batch that might get stale on the counter.

Cranberry Granola

A yummy granola for yogurt or to just munch on!

Ingredients

  • 1/3 cup coconut or regular sugar
  • 4-5 cups of oats
  • 1/2 cup butter
  • 1/3 cup honey
  • 1 cup cranberries
  • 2 T chia seeds
  • 2-3 T pumpkin seeds

Instructions

  1. In a large microwave bowl, mix sugar, butter and honey. Slowly heat until butter begins to melt. Add remaining ingredients and mix well. Pour into a 9x12 dish and bake for 15-20 minutes or until browned.
  2. Allow to cool and cut into bars or crumble for granola.
  3. Store in an airtight container for up to a week.
