Chocolate Chip Banana Bars
My assistant is out on maternity leave, so I have a new, temporary assistant. New assistant brought me a similar recipe and suggested that I recreate it so I did. They were very yummy! I was proud of her for finding it and now I’m going to miss new assistant when old assistant returns next week. Have I grown to now have two assistants from now on? Maybe so… :)

Chocolate Chip Banana Bars
Yummy chocolate chip and banana bars.

Ingredients
- 1 cup mashed bananas, about 3 medium
- 1/3 cup coconut or monk fruit sugar
- 2-3 T melted butter and cooled to room temperature
- 2 T almond milk or milk of choice
- 1 large egg
- 1 t vanilla extract
- 3/4 cup almond flour or flour of choice
- 1/2 t baking soda
- 1/2 t ground cinnamon
- Dash of ground nutmeg
- 1/4 t salt
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a mixing bowl, mash bananas. Stir in the sugar, butter, milk, egg and vanilla until combined.
- In a separate bowl, mix the dry ingredients and then fold into the wet ingredients.
- Fold in chocolate chips and pour into your favorite dish.
- Bake for 16 to 20 minutes or until a toothpick comes out clean. Cool and cut into bars.
