Healthier Sweet Potato Casserole

Who doesn’t love sweet potatoes? I grew up eating them often and I have started adding them to all kinds of things lately. Smoothies, salads, roasting them, all the above.

I recently saw Eating Bird Food’s recipe for her sweet potato casserole and it sparked some ideas in my head. So off I go to create my own. She has several yummy versions but here is the one I fell in love with. And visit her site - she is adorable!

My version has items that we eat in my house often. It is sweet but not sweet if that makes sense. That is also exactly how my husband describes me.

  • Ground flaxseed - YUMMYYYYYYY. We add this to tons of things for extra fiber. Salads, smoothies, oatmeal, everywhere.

  • Coconut milk and oil - easy to bake with in most all dishes.

  • Quick Oats - I used organic from Sprouts and they are my absolute favorite from anywhere. You can buy in bulk and get just what you want.

  • Honey - I use various types. My favorite is a hot honey from Fuego Spice Company. You can grab HERE. Honey just adds a sweetness without all the junk. Please use good honey though. Better yet - one from your region.

I would love for you to try this recipe. I promise that your family won’t miss the marshmallows. If they pitch a fit, just throw some marshmallows on top!

Sweet Potato Casserole

Sweet Potato Casserole

Ingredients

  • 4 cups cooked sweet potatoes
  • 1/2 cup coconut milk
  • 1 T honey
  • 2 T ground flaxseed
  • 1/2 t vanilla
  • 1/2 t salt
  • 1 t cinnamon
  • 1/2 cup pecans
  • 1/3 cup quick cooking oats
  • 2 T brown sugar
  • 3 T melted coconut oil

Instructions

  1. Mix the first 7 ingredients and place in a casserole dish.
  2. Mix the topping items together and sprinkle over the potato mixture.
  3. Bake for 30 minutes at 350 degrees.

Notes:

Note that this is for a small casserole dish. Please double for a full size dish.
