Oh, I do love a quick and simple salad. I recreated this one last summer for my hubs and we both loved it. Simple ingredients and a quick dish. Enjoy!

Garbanzo Bean Salad

Ingredients
- 2-3 cups cooked garbanzo beans (chickpeas)
- 1/2 cup chopped fresh parsley
- 1/2 cup diced red onion
- 1 cup diced celery
- 1/2 cup diced red and green peppers
- 3 tablespoons avocado oil or olive oil
- 1/2 teaspoon kosher salt
- 1 teaspoon pepper
- 3 tablespoons lemon juice
- 2 minced garlic cloves
Instructions
- Mix and serve immediately.
