Papa Verlons Cranberry Salad

As a child, my sweet sweet Papa was famous for certain dishes during the holidays- Canadian honey cookies and cranberry salad. I couldn’t understand why the adults liked either! He would spend tons of time perfecting both and only used the best ingredients. He also didn’t make a lot so the family did all they could to snag the leftovers. I finally tried the cookies as a teenager and understood the fuss. My uncle Mike would fake bathroom trips, smoke breaks, anything to get himself in the vicinity when my Papa brought them out. (He actually hid them until dessert time!) My grandmother had never made the cookies herself but she did have the recipe and passed it to me and my aunt. We have both tried numerous times to duplicate and failed every time. I’ve gotten close once! #thisyearistheyear

Anyway- back to the cranberry salad! Half of the family preferred canned cranberry sauce (who doesn’t love a can of molded cranberry jelly?) and the other half never missed eating his salad so my grandmother provided both. My mom recently made this for us when we visited for an early Thanksgiving. I love the fresh ingredients and it tastes very light and tangy. It does have sugar but that’s okay since you aren’t eating the entire container. Unless you are my uncle Mike. Or my dad. Or my uncle Bobby. If you are, come see me, I miss you!

Cranberries are full of nutrients and antioxidants. Some nutritionists even put them in their superfood categories. They also:

  • Lower the risk of infection in the urinary tract (UTIs)

  • Have been linked to lowering your cancer risk in some populations

  • Enhance immune function

  • Lower blood pressure

How can you eat cranberries?

  • Cranberry salad!

  • Juices (be careful and choose one without added sugars)

  • Add to salads

  • Add to stuffing or casseroles
